To add a new note to a stack, tap the compose button at the left of the toolbar at the bottom.

If you are already in editing mode, you can tap the compose button at the bottom-left to create a new note without exiting to the notes list.

When you are making many new notes, it is useful to use the Save+ button at the top. It saves the current note, and immediately makes a new one.
