To add a new note, select a stack, and then tap the compose button on the right of the toolbar above the note browser.

If you are already in editing mode, you can tap the compose button at the bottom-left to create a new note without exiting to the notes browser.

When you are making many new notes, it is useful to use the Save+ button at the top. It saves the current note, and immediately makes a new one.
